Stir-Fried Chicken with Holy Basil

The Thais love experimenting with the different types of basil and one of the most favorite in most Thai homes is this easy-to-do dish.

Well, not only the Thais. I love this dish too that I can't resist not to order it whenever I patronize a Thai restaurant. 



Serves 4

Ingredients:
2 tbsp Cooking oil 2 Tbsp
4 Garlic cloves, peeled and coarsely pounded
4 Chilli padi, coarsely pounded
30g Coriander root, skinned and coarsely pounded
1/2 tsp Black peppercorns, coarsely pounded
500g Chicken, deboned and sliced
2 tsp Palm sugar (gula Melaka), grated
2 tbsp Fish sauce
80g Holy basil leaves

Method
1. Heat oil and sauté the pounded garlic, chilli padi, coriander root and black peppercorns until aromatic.
2. Add in the chicken slices and the rest of the ingredients. Stir-fry for about 10 minutes, until the chicken is cooked.
3. Serve hot.
